Aduki beans (also spelled adzuki) are small, deep-red beans with a naturally sweet, nutty flavour and a soft texture when cooked. They're a staple of Japanese and East Asian cooking – the base of sweet red bean paste – and just as useful in Western stews, veggie burgers and grain salads.
