What makes basmati different from other long-grain rice? Basmati grains lengthen as they cook and contain less starch than standard long-grain rice, so they finish fluffy and separate rather than sticky, with a distinctive fragrance.

Should I rinse basmati before cooking? Yes, rinsing under cold water until it runs clear removes surface starch and helps the grains stay separate. Soaking it for 20–30 minutes first gives even fluffier results.

How much water do I use? A good guide is about 1 part rice to 1.5 parts water for white basmati. Brown basmati needs more water, around 1 to 2.5, and a longer simmer.

What's the difference between white and brown basmati? Brown basmati keeps its bran layer, so it's chewier, nuttier and higher in fibre but takes longer to cook. White basmati is lighter and fluffier and cooks faster.
