Pine Nuts
For pesto: their soft texture and rich oil emulsify smoothly with basil and olive oil – the creamy depth that cashew or walnut substitutes don't quite match.
As a garnish: toast them in a dry pan for a few minutes to bring out their woody, toasted flavour, then scatter over squash, spinach salads or pasta.
For baking: the classic topping for Italian pignoli cookies.
Pine nuts are rich in monounsaturated fats, vitamin E, zinc and magnesium.
