Pistachio coconut lemon energy bites

20 minutesThese super tasty snack balls made with pistachios, coconut and lemon will give you an extra kick of energy!

Ingredients

pistachios 125g
-
desiccated coconut 75g

Raw Gorilla raw organic virgin coconut oil 3 tbsp
- Zest of half lemon
- Juice of 1 small lemon (around 3 tbsp)

agave syrup 2 tbsp

chia seeds 1 tbsp
Directions
- Add all the ingredients to a food processor and blend for a few minutes until a dough is formed.
- If the dough is too dry you can add a little more lemon juice. If it’s too wet add some more desiccated coconut.
- Divide the mix into 12 pieces. Using your palms roll each portion into a bite size ball.
