Ingredients
- 300 g of fresh cherry tomatoes (any kind of tomatoes will be great)
- 2 balls of fresh and soft mozzarella (1 per person)
- a handful of fresh basil leaves
- salt and black pepper to taste
- extra virgin olive oil
Directions
- The secret of Caprese is the ingredients. You can really taste them in this salad! Look for soft, spongy mozzarella balls that are packed in water, juicy sweet tomatoes, fresh basil and use the best organic olive oil you can find.
- Prepare two medium size plates.
- Remove the water from the mozzarella and cut it into thick slices (use a sharp knife!) And place them on one side of the plates.
- Cut the cherry tomatoes into halves (or bigger tomatoes into slices). Place them on the other side of the plates. If you use large tomatoes you can layer the slices with mozzarella.
- Top with basil leaves. Sprinkle some salt and freshly ground black pepper for taste.
- Drizzle generously with olive oil. Serve with a slice of sourdough. Buon Appetito!
- Tip: For a richer version, you can add sliced avocado, organic olives and/or capers.
