Spiced carrot banana bread

10 minutesThis spiced vegan carrot banana bread is moist and full of flavour, with a hint of cinnamon and a crunch of walnuts. It will make a great healthy snack or dessert.

Ingredients
- 3 ripe bananas
- all-purpose flour 350 g
- 2 carrots
- true Ceylon cinnamon 3 tsp
- walnuts (broken or chopped
- coconut sugar 100 g
- sunflower oil 80 ml
- baking powder 2,5 tsp
- baking soda 1 tsp
- Celtic salt
- plant based milk 150 ml
- ground ginger 1 tsp
Directions
- Preheat oven 180C.
- Grease the loaf pan.
- Mash the bananas and grate the carrots separately. The bananas should be ripe and soft.
- In a large bowl, add flour, baking powder, baking soda, spices, salt, sugar and mix.
- Add oil, mashed banana, plant based milk and mix.
- Stir in the grated carrots and walnuts and mix to combine.
- Bake in the loaf pan for about 60 minutes.
