This colourful salad is easy to make and simply delicious. Enjoy as a snack or lunch meal with hummus and sourdough toasts!

Ingredients

  • 2 cups fresh colourful cherry or plum tomatoes
  • 1 large red onion
  • 4 tbsp organic olive oil
  • 1 pinch sea salt
  • 1 pinch black pepper
  • 1 tsp fresh or dried oregano

Directions

  1. Wash and cut tomatoes into halves. It makes them easier to scoop and bite into.
  2. Cut the onion in half and then each half in thin slices.
  3. In a bowl, mix tomatoes with onion. Let the onion slices separate.
  4. Add salt and freshly ground pepper for taste and mix.
  5. Add olive oil and a sprinkle some vinegar. Mix everything.
  6. Top with fresh or dried oregano! Enjoy!
