Super creamy and velvety cauliflower soup recipe ready in 30 minutes! Perfect evening meal on cold autumn days.

Ingredients

  • 1 (about 1 kg) cauliflower
  • 4 potatoes
  • 1 litre vegetable stock
  • 1 onion
  • 4 tbsp olive oil
  • 2 garlic cloves
  • 1 cup plant based milk
  • 1/2 (for taste) salt
  • 1/2 tsp (for taste) pepper
  • 1 tsp nutmeg

Directions

  1. Wash the cauliflower and remove the green leaves. Cut it in smaller pieces.
  2. In a large pot heat up some oil and add cut onions. Fry for 2 minutes.
  3. Add garlic and cauliflower. Fill the pot with vegetable stock and cook for 15 min.
  4. Add plant-based milk and cook for another 5 min.
  5. Add salt, pepper and nutmeg. Using a hand blender, blend everything until smooth and creamy.
  6. Serve with croutons and fresh dill!
