Easy focaccia with lemon and herbs

Enjoy this Italian classic flat bread at home! Easy to make and delicious. It requires just a few ingredients and a pair of hands. This version features extra herbs and lemon for a more unique flavour.

Ingredients

  • 450 g organic white flour
  • 1 package of instant yeast (7g)
  • 4 tbsp of extra virgin olive oil, plus more to serve
  • zest of 1 lemon, plus a few thin slices
  • 1 handful of fresh or dried rosemary and thyme
  • 1/2 tsp Sea Salt
  • balsamic vinegar to serve

Directions

  1. In a large bowl, mix the flour and salt. Prepare the yeast according to instructions and pour it over the flour.
  2. Add 1 tbsp of the olive oil and then form the dough. Use your hands!
  3. Keep on kneading the dough for 10 minutes. Add the lemon zest and thyme and mix it.
  4. Oil a new bowl and transfer the dough into it. Cover it with a cotton kitchen towel and put aside. Leave it until it doubles in size. It will take more or less 1 hour.
  5. Spread the dough on the sheet, filling up all the corners. Leave it in a warm place for 30 minutes. (Cover it loosely)
  6. Press the dough with your fingers making dimples and top it with rosemary and lemon slices..
  7. Drizzle over the remaining olive oil (or add more) and gently top it with sea salt.
  8. Prepare a large baking sheet.
  9. Preheat oven to 180°C.
  10. Place it in the oven and bake for 15-20 min until golden.
  11. Cut it in slices and serve with a dip - a mixture of olive oil and balsamic vinegar.
