Super easy classic recipe for creamy and comforting pumpkin soup. Fast to make, subtly sweet, perfectly spiced - simply delicious! Ready in 30 minutes.

  1. Heat olive oil in a large pot, add chopped onion and cook for 3-4 minutes, until soft.
  2. Add garlic, chopped pumpkin and potato. Then saute, stirring, for 5 minutes.
  3. Add water, stock cube and bring to the boil. Cook for 20 minutes until gets soft.
  4. Cool it slightly, then blend using blender or food processor.
  5. Add salt, pepper and spices. Blend for 3 seconds.
  6. Serve with roasted pumpkin seeds and sprinkle with olive oil.
