Warming and comforting soup made with super nutritious sweet potatoes providing you with lots of vitamins. Perfect for winter days lunches and dinners.

Ingredients

Directions

  1. Chop the onions, leek, celery, garlic and garlic.
  2. Peel the potatoes and cut them in small size cubes.
  3. In a large pot, heat up the olive oil. Add onion and sauté it for a three minutes on medium heat. Add leeks, celery, cook all the ingredients until they soften. Add garlic.
  4. Add chopped potatoes, mix and cook for a few minutes.
  5. Add the vegetable stock and spices and cook on medium heat (with the lid on) for about 20 minutes.
  6. When the potatoes are soft you can put the pot aside for 15 min.
  7. Blend the soup with a kitchen blender. Add salt and pepper for taste.
  8. Serve warm topped with pumpkin seeds. If you like herbs, you can top your soup with some thyme or rosemary.
