This is probably the easiest curry recipe you can find. Packed with healthy plant-based protein from tofu and spices for a delicious flavour. Serve it with basmati rice and enjoy for lunch or dinner.

Directions

  1. Chop the onion. In a medium saucepan sauté the fresh ingredients: onion, garlic and ginger (if you use fresh).
  2. Add all spices and cook together for a few minutes. This brings out the flavour of the spices.
  3. Add coconut milk, tomato passata and vegetable stock. Mix to bring the flavours together and cook for 20 minutes.
  4. Cut tofu in cubes and add to the sauce. Cook for another 10 min.
  5. Serve with basmati rice!
