Ingredients
- 800g New/Baby Potatoes
- 2 tbsps. Fresh Rosemary
- 1 tsp. Mustard Seeds
- 1/3 Red Onion
- 125ml Soy Milk/Coconut Milk
- 4 tbsps. Olive Oil
- 2 tbsps. Apple Cider Vinegar
- tsp Mustard
- 1 tsp. Sugar
- 1 tsp. Sea Salt
Directions
- Fill a large pot with water, add potatoes and bring to the boil. Cook for 15-20 minutes or until the largest potato is tender in the centre. Once cooked, drain the potatoes and set aside to cool.
- Whilst the potatoes are cooking, take a a separate bowl and combine milk, oil, vinegar, mustard, garlic, salt and sugar.Mix together and set aside.
- Chop the red onion ( and any other veggies you might want to add) and the rosemary.
- Once the potatoes have cooled down slightly, cut them in halves and transfer to a large bowl.
- Pour dressing over potatoes and add all the chopped vegetables and herbs and mustard seeds. Mix thoroughly to the help break up the potatoes and thicken up the dressing.
- Sprinkle over a few more sprigs of rosemary and it's ready to serve!
