Butter beans stew

Ingredients
- butter beans (1 large can)
- 1 onion (chopped)
- 2 carrots (thinly chopped)
- 1 can of tomatoes
- tomato passata 4 tbsp
- 4 potatoes (cut in small cubes)
- 2 cups of water
- 4 bay leaves
- Jamaican pepper (3-4)
- cayenne pepper ½ tbsp
- sea salt 1-2 tsp
- extra virgin olive oil
- freshly chopped parsley (optional)
Directions
- In medium size pot, heat up some oil, add chopped onions and fry for a few minutes.
- Add canned tomatoes, passata and stir.
- And potatoes, carrots, bay leaves, salt, Jamaican pepper and stir.
- Add water and leave it to boil. Cover with a lid and cook for about 20 minutes.
- Add drained butter beans. Add more salt for taste (if needed) cayenne pepper and cook for about 10 minutes.
- Served topped with freshly chopped parsley.
