Easy pumpkin soup

Ingredients
- 1 squash pumpkin
- water 2,5l

chilli
-
vegetable stock cubes 2
-
nutmeg 1 tsp
- ginger 1 tsp

salt 1 tsp
- 1 onion
- garlic 2 cloves

extra virgin olive oil 3 tsp

organic sunflower seeds 4 tbs
Directions
- In a large pot, add olive oil, chopped onion, and garlic. Simmer for 5 minutes.
- Add chopped pumpkin and a bit of water. Simmer for 10 minutes.
- Add the rest of water, stock cubes and cook for 20 min.
- Blend the soup until smooth. Add spices and mix.
- Serve with toasted sunflower seeds.
