Ingredients
- 250 g organic self-raising white flour
- 120 g plant-based butter
- 1 tsp bicarbonate of soda
- 200 g sugar or erythritol
- 1 tsp organic Ceylon cinnamon
- 1/2 tsp ground ginger
- 1 tsp vanilla extract
- 2 tbsp ground flaxseed (to make egg replacer)
- 1 tbsp orange zest
- 1 tsp cocoa
- 50 g raisins
- 50 g dried cranberries
- 1/2 tsp ground nutmeg
- 1 pinch salt
Directions
- Heat the oven to 180C.
- Prepare a 12-hole muffin tray - insert paper muffin cases in each hole.
- Melt the plant-based butter. Prepare the flax egg - mix ground flaxseed with 4 tbsp of water. Set the butter and flaxseed egg aside for a few minutes. Prepare the orange zest.
- In a large bowl, mix the dry ingredients: flour, soda, sugar and spices.
- In a another bowl, mix the wet ingredients: the flax egg, vanilla extract and melted butter. Combine the dry ingredients and the wet ingredients.
- Add the orange zest, dried cranberries and raisins. Mix well until smooth.
- Pour the batter mixture evenly into 6 paper cases. Add cocoa to the batter and mix. Pour the rest of batter into remaining 6 paper cases.
- Bake for 30 mins. The muffins should rise and become dark golden. Insert a toothpick or skewer into a muffin to check if they’re baked. If the muffins are still wet inside keep them baking for a few minutes more.
