Perfect for those who follow a plant-based diet and miss eggs and all those who want to avoid cholesterol. Top it with green onions and serve it on a sourdough toast and avocado. Yummy!

Ingredients
- 1 block of natural tofu (200-250g)
- 2 tbsp of nutritional yeast flakes
- 1 tbsp olive oil
- 1/2 tsp black salt (kala namak)
- 1 tsp ground turmeric
- 1/2 tsp curry powder
- a bit of black pepper (for taste)
- 1/2 tsp garlic powder
- 1 tbs chickpea flour
- 4 tbsp of plant-based milk
Directions
- Heat the olive oil in a pan using medium heat.
- Mash the tofu right in the pan with a fork. You can also crumble it into the pan with your hands.
- Cook it for a few minutes until the water from the tofu is mostly gone. You can also press tofu (with a tofu press) before cooking it to remove all the excess water.
- Add spices to the pan and mix with tofu.
- In a small bowl, mix milk and chickpea flour into a thick liquid batter.
- Pour the mixture over the tofu, mix quickly and cook for a minute.
- Serve it immediately!
- Tip: Serve it on a sourdough toast and mashed avocado, topped with chopped green onions! Enjoy!
