A Lista de Ingredientes "Pro"

Para fazer uma barra do zero, precisa de equilibrar sólidos e gorduras.

  1. Licor de Cacau (Pasta de Cacau): Esta é a alma do seu chocolate. Contém tanto os sólidos de cacau como as gorduras naturais na sua proporção original.

  2. Manteiga de Cacau Biológica: O segredo "Pro". Adicionar manteiga de cacau extra é o que dá a uma barra aquela fusão aveludada e profissional e um acabamento brilhante.

  3. Adocentante à Escolha: Os profissionais usam muitas vezes açúcar de coco biológico moulu finamente, xarope de bordo ou até eritritol para uma barra apta para keto.

  4. Inclusões: Os nossos Nibs de Cacau Cru Biológico, Sal Rosa do Himalaia, ou Fruta Liofilizada.

A Proporção de Ouro para Chocolate Negro

Embora cada chef tenha o seu segredo, uma clássica Barra Profissional Negra a 70% segue tipicamente esta fórmula:

O Processo Passo a Passo

1. A Fusão Lenta e Suave

Combine o seu Licor de Cacau e a Manteiga de Cacau num banho-maria (uma taça sobre uma panela com água a ferver suavemente). A Regra de Ouro: Nunca deixe uma única gota de água tocar no chocolate, ou ele vai "agarrar" e tornar-se numa pasta granulosa.

2. Incorporar o Adocentante

Uma vez derretido, incorpore o adocentante. Para uma textura profissional e suave, o adocentante deve ser o mais fino possível. Se usar açúcar de coco, triture-o primeiro numa liquidificadora de alta velocidade para criar um "pó".

3. O Passo "Pro": A Temperagem

Isto é o que separa os amadores dos mestres. A temperagem alinha os cristais de gordura na manteiga de cacau para que a barra fique brilhante e tenha um estalo nítido.

  • Aquecer: Leve a mistura a 45°C - 50°C

  • Arrefecer: Retire do calor e mexa constantemente até baixar para 27°C (isto chama-se "sementear").

  • Reaquecer: Aquecer suavemente de volta até 31°C a 32°C. Esta é a sua temperatura de trabalho.

4. Moldar e Solidificar

Deite o chocolate temperado nos moldes. Bata firmemente os moldes na bancada para libertar quaisquer bolhas de ar presas. Enquanto o chocolate ainda está líquido, pressione as inclusões da Whole Food Earth — como uma pitada de Pistácios Crus ou uma pitada de Sal Marinho.
