Ajvar is the Balkans' beloved roasted red pepper and aubergine spread – and the real thing is slowly fire-roasted, not a watery puree bulked with starch and sugar. Ours is made the traditional way: peppers and aubergine roasted until smoky-sweet, blended with oil and garlic, nothing artificial.

How to use it
