Ingredients
- 450 g organic white flour
- 1 package of instant yeast (7g)
- 4 tbsp of extra virgin olive oil, plus more to serve
- zest of 1 lemon, plus a few thin slices
- 1 handful of fresh or dried rosemary and thyme
- 1/2 tsp Sea Salt
- balsamic vinegar to serve
Directions
- In a large bowl, mix the flour and salt. Prepare the yeast according to instructions and pour it over the flour.
- Add 1 tbsp of the olive oil and then form the dough. Use your hands!
- Keep on kneading the dough for 10 minutes. Add the lemon zest and thyme and mix it.
- Oil a new bowl and transfer the dough into it. Cover it with a cotton kitchen towel and put aside. Leave it until it doubles in size. It will take more or less 1 hour.
- Spread the dough on the sheet, filling up all the corners. Leave it in a warm place for 30 minutes. (Cover it loosely)
- Press the dough with your fingers making dimples and top it with rosemary and lemon slices..
- Drizzle over the remaining olive oil (or add more) and gently top it with sea salt.
- Prepare a large baking sheet.
- Preheat oven to 180°C.
- Place it in the oven and bake for 15-20 min until golden.
- Cut it in slices and serve with a dip - a mixture of olive oil and balsamic vinegar.
