Ingredients
- 4 tbsp olive oil
- 1 large onion
- 1 leek
- 2 celery ribs
- 2 cloves garlic
- 1 kg sweet potatoes (yellow or orange)
- 1 litre vegetable stock
- 1 tsp organic ground ginger
- 1 tsp organic ground nutmeg
- for taste salt
Directions
- Chop the onions, leek, celery, garlic and garlic.
- Peel the potatoes and cut them in small size cubes.
- In a large pot, heat up the olive oil. Add onion and sauté it for a three minutes on medium heat. Add leeks, celery, cook all the ingredients until they soften. Add garlic.
- Add chopped potatoes, mix and cook for a few minutes.
- Add the vegetable stock and spices and cook on medium heat (with the lid on) for about 20 minutes.
- When the potatoes are soft you can put the pot aside for 15 min.
- Blend the soup with a kitchen blender. Add salt and pepper for taste.
- Serve warm topped with pumpkin seeds. If you like herbs, you can top your soup with some thyme or rosemary.
