Pick up a jar of quality coconut oil and the label often reads like a little string of promises: raw, organic, virgin, cold-pressed, unrefined. They sound impressive, but what do they actually mean, and do they make any real difference? As it happens, they do, and understanding each one tells you exactly why a good coconut oil is worth choosing over a cheap, refined tub. Here is what is behind the words.

Virgin: pressed from fresh coconut

Virgin is the word that matters most for flavour and quality. Virgin coconut oil is pressed from fresh coconut flesh, rather than from dried, aged copra the way cheaper oils are. Because it comes from the fresh fruit, it keeps far more of the coconut's natural aroma and delicate, slightly sweet flavour. Refined coconut oil, by contrast, is usually made from copra and then bleached and deodorised to clean it up, which strips out most of that character.
