Toasts with almond cream and dried tomatoes

Toasts with almond cream cheese and dried tomatoes

Ingredients

dried tomatoes in oil 1 small jar

ciabatta or bread of your choice
-
almonds 200 g (soaked)
- fresh or dried basil

extra virgin olive oil 4 tbsp

sea salt
- 1 lemon juiced

nutritional yeast 2 tbsp
- black pepper for taste

dried oregano
Directions
- Almond cheese cream:Soak the almonds in warm water for about 1 hour. Almonds will become softer. In a bowl (or food processor), add soaked almonds, juice of one lemon, olive oil, a pinch or two of salt, a bit of black pepper and nutritional yeast. Using a blender, blend until smooth.
- Making your own dried tomatoes in oil: In a small jar, add layers of dried tomatoes, add one clove of garlic, 1 tsp or organic dried oregano, 1 tsp of dried basil, a pinch of salt, and black pepper, and fill the jar with olive oil. Set aside for a few days.
- Cut the ciabatta into slices and toast them.
- Assembly:Spread some almond cream cheese on ciabatta slices and top them with dried tomato from the jar (you can use the entire one or chopped dried tomato). Sprinkle with some dried oregano, top it with fresh basil leaves.
- Serving tip: you can also top these ciabatta toasts with your favourite seeds.
