Herbs & Spices FAQs
What's the difference between a herb and a spice?
Herbs are the leafy green parts of a plant, like basil, oregano and thyme. Spices come from other parts – seeds, bark, roots, berries or fruit – such as cumin, cinnamon, ginger and peppercorns.
How should I store herbs and spices?
Keep them in airtight containers away from heat, light and moisture – not above the hob. Whole spices hold their aroma far longer than ground, so buy whole and grind as needed where you can.
How long do dried herbs and spices last?
Ground spices and dried herbs stay at their best for around 1–2 years but gradually lose potency as their oils oxidise; whole spices can keep their flavour for 3–4 years. If it barely smells of anything, it's time to replace it.
