Ingredients
- 8 star anise pods
- 1 tsp. red chili flakes
- 2 cups dark muscovado sugar
- 2 cups water
- 1 tsp. citric acid
- 1 tsp. salt
- 2 lemons
- ¾ oz. chilied star anise syrup
Directions
- In a medium saucepan, toast the chili flakes and star anise over medium-high heat
- Add the water to the sauce pan and simmer for 5 minutes keeping the height at medium-high
- Once the spices and water have fully merged, turn off the heat
- Add the sugar & salt
- Whisk until the sugar & salt have dissolved
- Using a zester, add the zest of 2 lemons
- Take off the heat
- Let cool until lukewarm
- Add the contents to a blender & blitz on high
- Strain the syrup through a paper filter
- Add in the citric acid
- Whisk until the citric acid has dissolved
- Add all ingredients into a shaker except for the club soda
- Shake and strain over fresh ice
- Top with soda
- Garnish with a wheel of lemon and sip away!
