Muchos de nosotros aprovechamos el período de teletrabajo de este año para reflexionar sobre lo que realmente queremos y necesitamos en casa. Muchos emprendieron proyectos de bricolaje. Otros se mudaron a una casa con jardín. Y de repente todos éramos muy conscientes de lo que teníamos en la despensa, los armarios y el congelador. El acaparamiento masivo que ocurrió al inicio del primer confinamiento fue difícil de gestionar, pero afortunadamente hay muchas formas de almacenar provisiones de emergencia que habrían evitado cualquier preocupación. Aquí te presentamos una lista de alimentos nutritivos que son fáciles de almacenar durante mucho tiempo. Cereales y harinas Almacenar cereales es sencillo. Cereales como el bulgur, el arroz integral, la espelta y la cebada se conservan bien durante meses en un recipiente hermético y son una base excelente para la mayoría de las comidas. También son grandes complementos para dietas veganas o sin gluten, ya que muchos cereales no contienen gluten pero sí un gran número de otros nutrientes con los que enriquecer la dieta. Son un topping estupendo para la avena, el yogur y los postres, contienen muchas vitaminas y duran una eternidad en el armario. Otra opción es conservar las frutas en bote. Es un proceso relativamente sencillo que requiere una olla para hervir agua, un tarro (los tarros de salsa reutilizados son perfectos) y un componente ácido como el vinagre. Una vez envasada la fruta, dura meses. Hierbas y especias Tener un buen especiero es como tener una buena caldera: sin duda mejorará tu vida durante años. Una amplia selección de especias en la cocina permite experimentar en la cocina, descubrir nuevas recetas o simplemente mejorar tus comidas habituales. Vanilla is so familiar that most people think of it as plain, even a byword for ordinary. The truth is almost the opposite. Real vanilla is one of the most labour-intensive crops on earth, and at its peak it has sold for more per kilogram than silver. Behind that unlikely price sits a fascinating story of orchids, hand pollination and patience. Here is why genuine vanilla is so precious, and why most of the vanilla flavour we eat is not really vanilla at all. Vanilla comes from a fussy orchid Vanilla is the seed pod of a climbing orchid, and orchids are notoriously demanding to grow. The plant needs a hot, humid tropical climate, plenty of time, and careful tending. Even in ideal conditions, a vine takes a few years before it flowers and produces pods. This is a slow crop from the very start, which is the first reason it is so costly. Every flower must be pollinated by hand Here is the detail that really explains the price. The vanilla orchid has a natural pollinator in its native Mexico, but almost everywhere else it is grown, that pollinator is absent. So each individual flower has to be pollinated by hand, one by one, by skilled workers. To make it harder, each flower opens for only about a day, so the timing has to be exact. Imagine hand-pollinating an entire plantation of flowers within a narrow daily window, across the whole flowering season. That intense, precise labour is built into every pod. The curing takes months Once the green pods are harvested, they are not ready to use. They must be cured over several months through a careful process of heating, sweating and slow drying that develops the deep, complex aroma we recognise as vanilla. Freshly picked pods barely smell of anything. It is this long, hands-on curing that turns them into the fragrant pods sold at a premium. Nothing about vanilla is quick. A fragile, concentrated supply Much of the world's vanilla comes from Madagascar, which leaves the global supply exposed. Tropical cyclones can damage a large share of the crop in a single storm, and when that happens, prices can soar. Vanilla has gone through dramatic price booms, and during the highest peaks it has indeed traded at levels comparable to, or above, silver by weight. High prices bring their own problems too, including theft from plantations and the temptation to pick pods before they are fully mature, which harms quality. Why most vanilla flavour isn't really vanilla Given all this, it is no surprise that the vast majority of vanilla flavouring in food is not made from the pod at all. Most is synthetic vanillin, a lab-made version of the single most dominant flavour compound in vanilla. It is vastly cheaper and it is what gives cheap "vanilla flavour" ice creams, biscuits and essences their taste. Real vanilla extract, by contrast, contains hundreds of aroma compounds working together, which is why it tastes rounder and more complex than the synthetic version. When a label says "vanilla flavour" rather than naming real vanilla or vanilla extract, it is usually the synthetic kind. Is real vanilla worth it? For everyday baking, good vanilla extract or a fraction of a real pod goes a long way, because the flavour is so concentrated. A single pod can flavour a whole batch of custard or a tray of biscuits, and the used pod can be popped into a jar of sugar to perfume it. Seen that way, even an expensive ingredient stretches further than you might expect. For special bakes, the depth of real vanilla is hard to beat, and knowing what goes into producing it makes it easier to appreciate. Vanilla earns its extraordinary price honestly: a slow-growing orchid, hand pollination flower by flower, months of careful curing, and a supply concentrated in storm-prone regions. Far from being plain, it is one of the most remarkable and hard-won flavours in the kitchen, and a reminder that the most ordinary-seeming ingredients sometimes have the most extraordinary stories.

This practical guide walks you through everything you need to cook with cardamom confidently, from your first pod to your favourite dish. Choosing the right cardamom Before you start, it helps to pick the right type. Green cardamom is sweet and aromatic, ideal for desserts, drinks and lighter dishes. Black cardamom is smoky and bold, made for slow-cooked, savoury cooking. Using the wrong one can throw a dish off balance, so match the cardamom to what you are making. If you only keep one, green cardamom is the more versatile all-rounder. Whole pods, seeds or ground How you use cardamom depends on the form you have. Whole pods are perfect for infusing flavour into a dish as it cooks, and they can be left in or fished out before serving. What is cardamom? Cardamom is a spice made from the seed pods of plants in the ginger family. Each small pod holds a cluster of tiny, intensely aromatic seeds, and it is these seeds that carry the flavour. Native to the lush forests of southern India and now grown in places like Guatemala and Sri Lanka, cardamom has been traded and treasured for thousands of years. Its flavour is unmistakable: warm and sweet, with fresh, citrusy and almost minty notes. A major review published in late 2025 put ultra-processed food back in the headlines. A series of papers in The Lancet, drawing on more than a hundred long-term studies, concluded that diets high in ultra-processed food are linked to harm across every major organ system in the body. One of the researchers called it a "seismic" threat to public health. Here is what the study found, what it does and does not prove, and what it means for how you eat. First, what counts as ultra-processed? Not all processing is bad. Freezing vegetables, milling flour, drying fruit, these are processing too, and they are fine. Ultra-processed food is a specific category: industrially made products built largely from substances you would not find in a home kitchen, things like protein isolates, modified starches, emulsifiers, artificial sweeteners, colours and flavourings. Think packaged snacks and crisps, fizzy drinks, most breakfast cereals, ready meals, mass-produced bread and a lot of "diet" and protein bars. The giveaway is usually a long ingredients list full of names you do not recognise. This matters because ultra-processed food is now the bulk of what many of us eat. In both the UK and US, more than half of the average person's daily calories come from it. What the study actually found This was not one small experiment. Forty-three scientists from six continents spent years reviewing more than 100 long-term studies covering close to 10 million people. Across that evidence they found ultra-processed food linked to more than 30 negative health outcomes, spread across the whole body: Heart and circulation: higher risk of heart disease and stroke. Metabolism: higher risk of obesity and type 2 diabetes. Liver: links to non-alcoholic fatty liver disease. Brain and mood: associations with anxiety, depression and even Parkinson's disease. Other systems: links to certain cancers, kidney problems and early death. Of the 104 long-term studies they examined, 92 reported a higher risk of one or more chronic conditions. A separate US analysis went further still, tying ultra-processed food to more than 124,000 preventable deaths over a two-year period. An honest word about what this proves It is worth being straight about the science. Most of this research is observational, which means it shows a strong and consistent association between eating a lot of ultra-processed food and getting ill, but it cannot prove that the food is the sole cause. People who eat more ultra-processed food often differ in other ways too. That said, when this many studies, across this many people, all point the same direction, the pattern is hard to wave away. The researchers were clear that the weight of evidence now justifies treating ultra-processed food as a serious public health issue, not a fad worry. So what do you actually do about it? The encouraging part is that the fix is not complicated or expensive. You do not need a perfect diet or a cupboard full of supplements. You just need to shift the balance towards food that has had less done to it. A few simple moves: Read the ingredients, not the health claims on the front. A short list of recognisable ingredients is a good sign. Lean on single-ingredient staples: oats, rice, lentils, beans, nuts, seeds, fruit and vegetables, plain yoghurt. Cook a little more from scratch. It does not have to be elaborate; a pot of porridge or a tray of roast veg counts. Be wary of products that market themselves as healthy. Plenty of "high-protein" and "low-sugar" snacks are still ultra-processed. Make swaps, not sacrifices. Trade the flavoured cereal for oats and fruit, the snack bar for nuts, the fizzy drink for sparkling water.
