What is kombucha?

It starts life as ordinary sweetened tea, usually black or green, which is then fermented using a living culture of bacteria and yeast. How kombucha is made

The magic behind kombucha is a curious-looking culture called a SCOBY, which stands for Symbiotic Culture Of Bacteria and Yeast. This rubbery, pancake-shaped disc is added to sweetened tea, where it gets to work over a week or two.

During fermentation, the yeast and bacteria feed on the sugar and transform the tea.
