Find the right lentil
- Red split lentils – the fastest-cooking lentil, breaking down creamy for dhal and soups (also available natural)
- Red football lentils – whole red lentils that hold their shape slightly more than split
- Brown lentils – the mild all-rounder for casseroles and ragu (also available natural)
- Green lentils – firmer and peppery, made for salads and sides (also available natural)
- Dark green French style lentils – the premium Puy-style lentil that stays intact
- Dark speckled lentils – French-style character at a natural price
- Organic or natural? Same lentils in the pan – organic carries certification, natural keeps the price down
- Cooking for a crowd? Grab a Stock & Prep 1.5kg value bag – organic red split, organic red football, organic brown, organic green or natural green
As a rule of thumb: red split lentils cook fastest (around 15-20 minutes), brown and green lentils take a little longer, and French-style dark green lentils take the longest but stay perfectly intact. No dried lentil needs soaking – just rinse and simmer – while beans and chickpeas do benefit from an overnight soak before cooking.
