- Wash the cauliflower and remove the green leaves. Cut it in smaller pieces.
- In a large pot heat up some oil and add cut onions. Fry for 2 minutes.
- Add garlic and cauliflower. Fill the pot with vegetable stock and cook for 15 min.
- Add plant-based milk and cook for another 5 min.
- Add salt, pepper and nutmeg. Using a hand blender, blend everything until smooth and creamy.
- Serve with croutons and fresh dill!
