Ingredients
- 500 g pumpkin
- 2 litres water
- 1 medium size onion
- 3-4 cloves garlic
- 1 large potato
- 1 cube vegetable stock
- 1/2 tsp ginger
- 1/2 tsp coriander
- 1/2 tsp salt
- 1/2 tsp ground nutmeg
- 1/2 tsp freshly ground black pepper
- 2-4 tbs organic olive oil
Directions
- Heat olive oil in a large pot, add chopped onion and cook for 3-4 minutes, until soft.
- Add garlic, chopped pumpkin and potato. Then saute, stirring, for 5 minutes.
- Add water, stock cube and bring to the boil. Cook for 20 minutes until gets soft.
- Cool it slightly, then blend using blender or food processor.
- Add salt, pepper and spices. Blend for 3 seconds.
- Serve with roasted pumpkin seeds and sprinkle with olive oil.
