Beignets de lentilles rouges

Ingredients
- 150g Red Lentils
- 30g Chickpea Flour
- 1 Onion, chopped
- 2 Large cloves of garlic, chopped
- Vegetables of your choice - carrot, pepper, courgette, tomato
- 1 tspSesame seeds
- 1 tsp Cumin seeds
- 1 tsp Turmeric
- ½tsp Sea salt
- ½tbspchopped fresh ginger
Directions
- Rinse and clean the red lentils in a sieve under running water.
- Place lentils in a pot or pan with water and a pinch of salt. Bring to the boil and simmer for around 15 minutes, or until soft - there should be no water left.
- In a separate pan, cook the onion, garlic and chopped/grated vegetables of your choice and fry over a medium heat for a few minutes.
- Once the lentils and veggies have been cooked, put them all in a food processor along with the chickpea flour, sesame seeds, spices, ginger and coriander. Pulse a few times to make sure the mixture is properly combined.
- The mixture should now be mouldable - if not add some more flour. Shape into approx. 8 patties and fry them with a little oil. Fry each side until golden brown and crispy.
- Add a dip and/or side salad and enjoy!
