Roasted asparagus with lemon

15 minutesQuick, healthy, and incredibly tasty! Beautifully roasted asparagus elevated with a sprinkle of fresh lemon zest. The perfect 15-minute side dish for weeknight dinners or gatherings.

Ingredients
- 400 g fresh green asparagus

extra virgin olive oil
- 1 lemon juice and zest
-
a pinch of salt
-
black pepper (freshly ground) for taste
- plant based parmesan alternative (optional)

2 tsp of thyme
Directions
- Preheat the oven 180C.
- Preparing the pan - use parchment paper (for easy clean up) and grease it a bit with. Preparing the asparagus - cut off the woody ends (1-2 cm)
- Arrange the asparagus on the baking pan. Drizzle with olive oil, sprinkle with sea salt, freshly ground black pepper and thyme.
- Cut the half of the lemon into thin slices and lay them on top of asparagus. Squeeze the juice on top of it. Top with grated dairy-free parmesan (optional) and lemon zest.
- Place the pan in the oven and bake for 15 min.
