Kombucha is fermented tea: naturally fizzy, pleasantly tart, and – when it's made properly – alive. Much supermarket kombucha is pasteurised, which kills the cultures, and back-sweetened with syrups. Ours is raw and unpasteurised, with the live cultures, organic acids and enzymes intact.
