Quinoa salad with cherry tomatoes and seeds

15 minutesHealthy and nutritious summer salad with quinoa, pumpkin seeds, sunflower seeds and flaxseed. Perfect for lunch!

Ingredients
- colourful quinoa mix 200 g (cooked and rinsed)

pumpkin seeds 1 tbsp

sunflower seeds 1 tbsp

flaxseed 1 tbsp
- cherry tomatoes 200 g
- 1 cucumber
- 1 onion
- 1 lemon (juiced)
- extra virgin olive oil 2 tbs
- black pepper for taste
- salt for taste
- Fresh coriander for topping.
Directions
- Finely chop the onion, cucumber and tomatoes.
- Place quinoa, seeds and the veggies in a large bowl.
- Add salt, pepper, olive oil and lemon juice. Mix well.
- Serve with freshly chopped coriander.
