Spritz à la fraise pour toujours

Ingredients
- 30-35 chopped strawberries
- 1 cup water
- 1 cup cane sugar
- 2 inch ginger root in chunks (peeled)
- 1 teaspoon fennel seeds
- 1 ½ teaspoon citric acid
- 30g strawberry ginger syrup
- Sparkling water to top off
Directions
- Clean and chop strawberries into quarters
- Put aside about 1 cup of the best looking berries for garnish.
- Bring strawberries, sugar, water and ginger to boil in saucepan.
- Simmer for 20 minutes, stir in the fennel seeds for the last 5 minutes
- Take off the heat and let it cool
- Strain the strawberries and seeds out using a wire mesh strainer or cheesecloth to squeeze the last of the juice and colour from the berries
- Infuse your cooled syrup with citric acid
- Add ice into a glass
- Drizzle in the syrup over the ice
- Top it off with sparkling water
- Stir to combine the ingredients
- Garnish with a strawberry half on the glass rim and enjoy!
