Capers
Organic capers in brine (Organico, 250g): the classic all-purpose jar.
Organic capers in extra virgin olive oil (Mani, 180g): rounder and richer, ready for antipasti.
Organic capers in wine vinegar (Biona, 140g): the sharpest of the three, for cutting through rich dishes.
Use them in puttanesca, with smoked salmon, fried crisp over fish, or chopped into tartare sauce and salsa verde. Rinse before use if you prefer them milder.
