Find the right lentil

As a rule of thumb: red split lentils cook fastest (around 15-20 minutes), brown and green lentils take a little longer, and French-style dark green lentils take the longest but stay perfectly intact. No dried lentil needs soaking – just rinse and simmer – while beans and chickpeas do benefit from an overnight soak before cooking.
